Simply put, the longer cheese is aged naturally, the sharper and more pronounced the Cheddar flavor becomes. Mild Cheddar cheese is generally aged for weeks to months, whereas an extra sharp is aged for years in a temperature controlled space.
We now have some 2+ year naturally aged Cheddar of our own that is sitting quietly and aging well, but when we acquired Valley Side Farm Cheese, we also acquired their coveted 8+ year naturally aged cheddar!
